A vegan delight

First and foremost I’d like to apologise for my absence. I’m in the midst of finishing my dissertation so spare time is currently reserved for sleeping, eating, and breathing. Once I’ve submitted it, I’ll be back to weekly postings. Hooray! In the meantime though, I made this for lunch today and just couldn’t resist sharing it with you all. There are various variations of this on the web but this mine. I hope you enjoy!

A kind of vegan mousse, with the potential to be ice cream

1 ripe avocado, discard skin and stone (or grow your own avocado tree!)
1 ripe banana, discard peel
1 – 1 1/2 tbsp cocoa powder
1 tbsp peanut butter (crunchy or smooth, whatever floats your boat, personally I love chunks and crunch!)
4-6 tbsp milk or milk substitute
3-4 pitted dates roughly chopped
Handful of flaked almonds
Date syrup or some other form of drizzly delicious sweet thing, or go without.

Put everything bar the flaked almonds and syrup in whatever blitzer you have (food processor, smoothie maker, hand blender…) and whizz until smooth (except for the dates, these will probably remain chunks to some extent, but that’s ok, chunks are little taste and texture explosions of surprise). If you have none of these blitzers, then do what my friend Flora and I once did when we found ourselves ill-equipped to make guacamole*, and use a potato masher with determination.

Pour into a glass and stick in the fridge** for at least an hour.

Zig zag date syrup or alternative on top and scatter/pour on a generous handful/mound of flaked almonds. I would also recommend a small sprinkling of raw cacao nibs, however, I didn’t have any in my cupboard today so I wasn’t able to include them. I’m sure they’d be a welcome addition though.

Eat.

*We were drunk, the avocados weren’t in any way, shape or form ripe, it didn’t work. BUT, if you’re not drunk, and your fruit IS ripe, then it will work. You could probably even just pulverise it with a wooden spoon if that takes your fancy instead.

**I reckon this would come out equally as well if you stuck it in the freezer for an hour. I will try it out and update. Let me know if you do it first though!
